Easter Creme Egg Cupcakes


Happy Easter! What better way to spend your day by baking some scrumptious Crème Egg Cupcakes?! These sweet, gooey goodies are so easy to make and taste incredible!



I'm still mastering the art of decorating, I think my icing needs some work - but to be honest how these taste means you not be looking at them long enough to notice!

You will Need:

Base:

115g caster sugar
115g Butter
125g self-raising flower
2 large eggs

Decoration:

125g icing sugar
150g butter
Crème Eggs

1. Blend the caster sugar and butter together, making a smooth and creamy mix

2. Break two eggs into a jug and beat until well blended

3. Add the eggs to your butter and sugar and mix until smooth

4. Gradually add your flour to the mix stirring well as you go, whisk mixture until creamy, thick and well blended.

5. separate your mixture into cupcake cakes and bake at gas mark 4 for 15-20 minutes. You will know your cakes are done if you use a tooth pick, poke it into the cake and on removal if there is no mixture on it your cake is done.

6. Take out of the oven and leave to cool for 30 minutes.

7. Now time to make the icing, mix your butter and icing sugar together and using a piping bag swirl the mixture onto your cakes.

8. Now the best bit! Break your Crème Egg into quarters and pop on top of the icing, allow the fondant to pour out into the cake. Yummmm.

9. Enjoy with a good cup of tea, or in my case a nice cold glass of milk.
